Green beans are harvested from May to September.

Nutritional value of green beans

Green beans provide little energy (30 kilocalories per 100 grams). When eaten young, green beans are rich in vitamins (C, B5, B9) and fibre. Green beans are also a good source of vegetable proteins and minerals.

Green bean varieties

There are many varieties of green beans, but generally they can be divided into French filet beans, harvested early (extra-fine), and snap peas, which have an oval section and can be eaten at a later stage. There are also butter beans, which are yellow.

Green bean storage

Green beans may be kept for 2 to 3 days in an airtight container in the crisper. It is very easy to freeze green beans, just trim them and place them raw in a bag, without blanching them.
