Climacteric

A climacteric fruit is a fruit sensitive to a certain plant hormone: ethylene. In climacteric plants, this phytohormone causes fruit to mature.

Climacteric fruit include apples, pears, bananas, melons, tomatoes, etc.

There are also non-climacteric fruit, which are not ethylene sensitive: strawberries, cherries, citrus fruit...
